Tuber Aestivum, better known as the black summer truffle or more commonly “scorzone” because of its rough rind, is a good truffle, although it lacks the delicacy and finesse of scent of the black winter truffle (Tuber melanosporum). Tuber aestivum is a hardy truffle and keeps longer than other varieties, thus allowing it to be used more quietly. Indeed, in the truffle are contained in a single fruit, all the fragrances and smells of the forest, its taste is intense but delicate, and its smell is “tantalizing” to say the least.
