My name is Simone Mori, Truffle farmer by profession and owner of a farm that allows me to harvest and grow truffles, along with growing produce in the air (fruits, vegetables, legumes, wheat and olives).
Our farm is located in Lunigiana, a corner of land in upper Tuscany, in the Tuscan-Emilian Apennines, between the provinces of Parma, La Spezia and Massa Carrara that has the peculiarity of having a unique microclimate in Italy, since it is located in a 90-kilometer strip of land devoid of primary pollution.
We decided to create with our products a line of jams, creams, condiments and other truffle-based delicacies with the prerogative of using mainly raw materials, grown by us or in our territory, to have a direct supply chain with zero km.
We have focused our production mainly on jams, such as banana, onion, chestnut, potato, apple wheel, pear, bell bell pepper, pumpkin and honey, all strictly with truffles to be paired with cheeses, main courses or aperitifs, to differentiate us from other truffle product companies. Our condiments range from truffle cream to carpaccio and chopped black truffle to hazelnut and truffle pesto butter and oil and truffle tomato puree as well as porcini mushroom cream.
The flagship of our production comes from Pontremolese tradition and is TESTAROLO (formerly a Slow Food presidium), an ancient first course that originated as a poor food and came to prominence after World War II, which we offer in truffle or porcini mushroom versions (versions produced only by our company).
Truffles in one case and porcini mushrooms in the other, are present in the very ‘dough of the testarolo making the simplicity and speed of preparation a prerogative of a unique and delicious dish.
